This page is a piece of fun and info about what we do - to express gratitude to all our faithful holiday makers who know the quality of our food – and want recipes – and people who have read my book ‘Fly Me to the Moon’ – and want to hear news of the continuation of Juliet's journey. We'll be changing the page each month so please come back – as well as coming to us for more holidays, or if you're new, for your first holiday with us. Recipes Our recipes all follow yogic principles. They are generally satvic, meaning that we use fresh ingredients intended to be good for our physical, bodily health and which do not excite the emotions, or make us feel sleepy or over stimulated, both of which adversely affect meditation practice. The only additive to use is your love! You can smile at your food – there are no onions, said to be pranic negative, so there's no tears. Our recipes are for you to enjoy a taste of West Crete Holidays at home. Cooking time! Each month you get a new recipe and some cooking tips too. Potato Tortilla This lovely Spanish omelette is simple and you can add other veggies too. For 2 – with some left over to eat cold 1 lb/500g potatoes 6 eggs Oil/butter or a mix of both, enough to cover the bottom of the frying pan Salt Herbs – sage, marjoram, basil are all great or try dried tarragon A little flour – any sort: wheat or cornflour if gluten is a problem The proportions potato/egg can be varied. Cube the potatoes so they will cook quickly and toss in a little salted flour – this stops them sticking to the pan – yippee! Heat the fat in the frying pan and check to see if a piece of potato immediately bubbles the fat - only then add the potatoes. Reduce the heat and if possible lid the pan – even if the lid is a bit small and doesn't cover the pan totally. The potatoes should steam rather than fry to a dry brown. Stir occasionally and shake the pan. In the meantime beat the eggs in a bowl large enough to take the potatoes too and add the herbs. When the potatoes are soft (cooked through) let them cool for a few minutes then mix them into the egg mixture. You can mash the potatoes a little if you wish. This is the point where you can make variations: If you are a bit short on potato, (the egg should completely coat the potato and form a good pool in the bowl) then add another veggie to hand – frozen sweetcorn goes well, just add as frozen. If you have rather a lot of potato, add another egg. Check your frying pan and scrape up any stuck-on bits, add a good coating of olive oil – swirl up the sides of the pan too or add a little of both oil and butter which helps the tortilla not to stick. Turn up the heat and let the fat get hot. Pour in the potato mixture and spread it across the pan, flattening it down. The potatoes can poke out of the omelette a bit. This is the last opportunity to add another egg. Turn the heat down medium/ low and lid the tortilla. If your pan is bigger than the lid don't worry, it will just rest on the potato. When the tortilla is firm nearly to the top you can finish it under a hot grill, or just leave it covered on the hob. Eat warm or cold. Tips for winter salads On a sunny winter day a salad can be nice, but some ingredients just aren't at their best. So: Tomatoes: add sundried tomatoes, rehydrated in oil, as fresh ones can be without flavour. Or add chopped red capsicum peppers and or red plums or apples, chopped. They give colour and are sweet. Warm salad: to your salad add cubed, freshly boiled potatoes dressed in mayo and yoghurt with dried oregano. Throw them on your salad just before serving. Beetroot: bake in a covered saucepan in a medium oven with the skin and root still on, when the skin will break under the pressure of a thumb pushing it – it's done. Skin, slice or chop the beets and if they are not so sweet add honey and mustard into the dressing and they will be fine. Croutons: cube stale bread and fry in olive oil adding a few dried herbs like rosemary and basil. Toss to coat and crisp. Put on top of your salad or serve separately, direct from the pan, at the table. This keeps them warm.
